On June 15th, members from our council served at the 6th annual Catholic Men's Conference along side brothers from the Hillsboro Knights of Columbus Council 1634. The conference was held for the first time this year at neighboring St. Pius X parish.
Catering for the event was coordinated by our district deputy and members of the Hillsboro, St. Juan Diego, and St. Pius X councils.
Our new council participated in this event in order to learn what it takes to coordinate and execute an event, and to help raise the initial funds our council needs
to get started.
So what did we do? We cracked, scrambled, cooked and served about 7 gallons of eggs. We cooked and served about 40 pounds of sausage, and numerous gallons of gravy for biscuits and gravy. We cut melons, tomatoes, lettuce and served sandwiches with about 40 pounds of lunch meat. We brewed 10s of gallons of coffee and lemonade. We learned about proper kitchen hygiene from one who knows well. We cooked, cleaned, ate and had a good time working together preparing food for about 220 men seeking to grow in their faith. Leftover food was donated to St. Mary's Home for Boys.
Between cooking and serving meals, we were able to sit in the conference and listen to Tim Staples, Director of Apologetics and Evangelization at Catholic Answers, Vernon Robertson who recently was awarded the Pro Ecclesia et Pontifice (For Church and Pope) Cross by Pope Emeritus Benedict XVI for his work and leadership in the New Evangelization, and Portland's own Bill Diss who is on the front lines of living the gospel of Life.
It was a great day, and it helped establish our council by raising the funds we need for initial start up costs. And as you can see, St. Pius X parish has an amazing kitchen and facilities.
